Traditional Mint Switchel (Haymaker's Punch)

A refreshing, historic, and thirst-quenching restorative beverage known as Haymaker's Punch. This traditional recipe combines the zing of raw apple cider vinegar and fresh ginger with the natural sweetness of pure maple syrup, beautifully infused with fresh mint leaves.

  • 4 cups Water — Divided into 1 cup hot and 3 cups cold
  • 2 tablespoons Fresh ginger — Peeled and freshly grated or very finely minced
  • 0.5 cup Fresh mint leaves — Lightly packed, plus extra sprigs for garnish
  • 0.25 cup Apple cider vinegar — Raw and unfiltered (with the 'mother')
  • 0.25 cup Pure maple syrup — Dark or amber grade for best flavor
  • 1 tablespoon Fresh lemon juice (optional) — Freshly squeezed

0.5 cup Fresh mint leaves Lightly packed, plus extra sprigs for garnish
0.25 cup Apple cider vinegar Raw and unfiltered (with the 'mother')
0.25 cup Pure maple syrup Dark or amber grade for best flavor
1 tablespoon Fresh lemon juice (opt.) Freshly squeezed

Instructions

  1. In a small saucepan, bring 1 cup of the water to a gentle boil.

    You can use a kettle to boil the water if preferred.
  2. Place the grated ginger and fresh mint leaves in a heatproof bowl or large glass measuring cup. Pour the hot water over them and use a muddler or the back of a wooden spoon to gently press the mint leaves, releasing their oils.

    Don't over-muddle the mint or it may become bitter. Just a few gentle presses will do.
  3. Let the ginger and mint steep in the hot water for 10 minutes to create a strong infusion.

    For a spicier ginger kick, you can steep this mixture for up to 30 minutes.
  4. Strain the steeped liquid through a fine mesh strainer into a pitcher, pressing on the ginger and mint solids to extract as much liquid as possible. Discard the solids.

  5. Add the apple cider vinegar, maple syrup, optional lemon juice, and the remaining 3 cups of cold water to the pitcher. Stir vigorously until the maple syrup is fully dissolved.

    Taste the mixture now and adjust the sweetness or acidity if needed by adding a splash more syrup or vinegar.
  6. Cover the pitcher and place it in the refrigerator to chill and allow the flavors to meld for at least 2 hours.

    Switchel tastes best when very cold. The flavors will continue to develop and smooth out as it rests.
  7. Stir well before serving. Pour into glasses filled with ice and garnish with fresh mint sprigs.

    For a fizzy variation, you can mix the chilled switchel base with sparkling water right before serving.
