Thoroughly rinse the red snapper inside and out under cold water. Pat the fish completely dry with paper towels. Moisture is the enemy of a crispy, non-sticking skin.
~5 minUsing a very sharp knife, cut 3 to 4 diagonal slits on each side of the fish. Cut down to the bone but not right through it. This helps the fish cook evenly and allows the marinade to penetrate the meat.
