Exquisite, melt-in-your-mouth Middle Eastern shortbread cookies made with a fragrant semolina dough. Stuffed with sweet, spiced dates and aromatic pistachios, then shaped in traditional wooden molds.

In a large bowl, combine the fine semolina, coarse semolina, sugar, and mahleb. Pour in the melted ghee and rub the mixture thoroughly with your hands for about 5 minutes until all the semolina grains are coated. Cover and let it rest at room temperature for at least 2 hours, preferably overnight.
~10 minDissolve the yeast in warm water and let it sit for 5 minutes. Add the yeast mixture, rose water, and orange blossom water to the rested semolina. Knead gently just until a cohesive dough forms. Do not overmix. Cover and let rest for 30 minutes.
~35 minPrepare the date filling: Knead the date paste with softened ghee and cinnamon until smooth. Roll into small balls (about the size of a marble).
~10 minPrepare the pistachio filling: In a bowl, mix the finely chopped pistachios, powdered sugar, rose water, and simple syrup until the mixture holds together slightly when pinched.
~5 minPreheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
~5 minTake a walnut-sized piece of dough and roll it into a ball. Use your thumb to hollow out the center, creating a small cup. Place a date ball or a teaspoon of pistachio filling inside, then pinch the dough closed to seal it completely. Roll smooth.
~20 minPress the stuffed dough ball firmly into a traditional wooden maamoul mold. Tap the edge of the mold sharply against your counter or cutting board to release the shaped cookie. Place on the prepared baking sheet. Repeat until all dough is used. Use different mold shapes to distinguish between date and pistachio fillings.
~20 minBake in the preheated oven for 12-15 minutes, or until the edges are just barely golden. The tops should remain relatively pale.
~15 minRemove from the oven and let the cookies cool completely on the baking sheets. Once cooled, generously dust the pistachio-filled maamoul with powdered sugar (traditionally, date maamoul is left un-dusted).
