The secret to this dish lies in the slow, patient frying of the onions until they turn a rich, dark mahogany brown, infusing the olive oil and the entire dish with a deep, sweet, and savory flavor.

Place the rinsed brown lentils in a heavy-bottomed pot with 2 cups of water. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15-20 minutes until the lentils are parboiled (tender but still have a firm bite). Do not drain.

~20 minRemove the pot from the heat. Keep the lid on and let the Mujadara rest for 10 minutes. This allows the moisture to redistribute and makes the rice fluffier.
